Unique Kababs of India

The kababs originated in Middle Eastern countries. In 14th century when the Mughals from these countries invaded India and made it their home, they brought with them Rikabdars & Bawarchis (personal chefs of kings), and the specialized equipment – ‘tandoor’ to India. The Kabab then was just meat sprinkled with salt and then barbecued. Shortly after, it caught the fancy of Indian chefs and in no time they began perfecting it into a sublime art. The kind which you can savour at The Great Kabab Factory.

For almost two centuries when Mughals ruled over India, these Rikabdars and Bawarchis created various types of kababs to please their masters. One such kabab is Galauti Kabab which is also a signature dish of The Great Kabab Factory. It is said that Galauti Kabab was invented by one of the chefs for his aging king – Nawab Wajid Ali Shah who lost his teeth but not his passion for meat dishes. Galauti means “melt in your mouth” i.e., melt-in-mouth kababs and was perfect for the toothless Nawab. Many such legendary kababs will be served at The Great Kabab Factory like Tandoori Chicken, Seekh Kabab etc.

By virtue of preparation, there are various kinds of kababs, like, Tikkas are boneless preparations cooked in tandoor; Shami Kababs are deep fried patties; Seekh Kababs are skewered meat/vegetables; Bharwan Kababs are stuffed kababs, for example – potatoes stuffed with cottage cheese and so on. Similarly various vegetarian kababs are available in India like, vegetarian Galauti Kabab, Tandoori Pineapple and many more.

Kababs in India have distinct taste profile and are entirely different from Arabic kababs like Shawarma and Shish Touk. This can be credited to the spices native to Indian subcontinent’ like, some of the best peppers and saffron are grown in India and hence have a predominant influence on Indian kababs.

Secret Recipe

The Great Kabab Factory owns a recipe bank of over 450 kababs that includes many closely guarded family recipes passed down through the ages. Our chefs have mastered and created our signature kababs through a decade of extensive research and development and have traveled to remote areas. Various imitations have been created but none match the unique flavor and aromas of the original The Great Kabab Factory signature kababs.

To ensure consistency and the same great taste everywhere, all retail locations worldwide use the The Great Kabab Factory proprietary ‘Spice Packs’. These Spice Packs are a secret spice combination, prepared and known to only a few select at head office.
